This simple dessert is a twist on the old chocolate wafer icebox/zebra cake and key lime pie. Silky, rich, creamy, DECADENT! Key lime lovers will rave.
Pasta with avocado pesto is a healthy, simple meal or side dish that can be served warm or at room temperature. The crunchy buttery Panko breadcrumb topping is a perfect contrast to the creamy texture of the avocado pesto. Avocado, basil, lemon, garlic, olive oil and pine nuts are the core ingredients. Hard to go wrong with that.
I love making this soup when I want something light and healthy in the fall or winter. And, admittedly, when I’m feeling lazy and want to whip up dinner in 20 minutes or so. Use whatever you have on hand along with some frozen wonton or dumplings.
Creamed Spinach is a wonderfully nutritious side dish for, well, just about anything. I love it with steak and fish. It can be made as light as you want (I use mostly skim milk) or rich and decadent with heavy cream.

Vegetarian pea soup – thick and flavourful – pure comfort food in our home. Very satisfying, very filling, very healthy. I serve it as a main weeknight meal from time to time along with some crusty bread and butter. Yum!
These potatoes are simply delicious – soft of the inside with crispy edges, garnished with a mixture of parsley, lemon and garlic.
