Most of us fall back on a few tried-and-true recipes when it comes to potatoes. For me, that includes mashed potatoes, baked french fries, crispy oven roasted potatoes and herb-lemon potato salad. I’ve recently added a new one to my repertoire – Roasted Lemon-Rosemary Potatoes. My mother is thrilled – she loves lemon on everything. My husband is not a big lemon fan, but manages to reach for seconds every time I make these.
There are hundreds of lemon potato recipes out there. Many of them take a long time to make because they add liquid and use large potato wedges. This one, inspired by Michele Scicolone who wrote The Italian Vegetable Cookbook, is simple and great. Crispy on the edges, soft in the middle, lemony with a hint of earthy rosemary. Yummy comfort food that goes well with just about any main dish. Mmmmmmm.
