Here’s a little change of pace for a side dish. These simple gruyère-topped tomatoes are a great accompaniment to an omelet, vegetarian, meat, chicken or fish dish. And perfect for brunch. Gorgeous enough to raise eyebrows and ready in only 10 minutes. They can easily be prepared ahead and popped under the broiler 3 minutes before serving. The cheese is rich, creamy and gooey. The breadcrumb mixture, highlighted with capers and green onions, adds a wonderful buttery topping with a little crunch. The dijon mustard kicks up the flavour.
The dish is really simple to prepare and adds a uniqueness to a meal. The cheese and other flavours elevate the tomato even if it’s not perfectly summer-ripe. I suggest you follow the recipe the first time, then ad-lib the next and the next as the measurements do not have to be exact. Did I mention this recipe only takes 10 minutes? Sooooo good!
